New Koi Farmer in Keo, Arkansas, USA

I have taken over a few neglected fish ponds my mother owns near her house. We're trying to rescue the brood stock now. I'm new to the Koi business so I'm trying to get a bit of an education. Being a newbie I have many questions.

There are three ponds on the farm; 2 larger ones (3-4 acres) and one small pond (1 acre). I have pulled up our poor brood stock. They have been neglected for a couple of years. Amazingly they seem to be in relatively good health. They will go in the larger pond for the winter. Preparations will begin on the one acre pond as soon as it dries up enough to get a dozer in it. Hopefully by Spring we will have the brooders healthy and happy and ready to make babies!!

I would appreciate any suggestions any of you have as far as sexing, spawning and producing desireable color combinations. This is a picture of one of the brooders:
