As baby koi grow older the breeder will cull them. So in the first cull when the koi are real young the breeder will go through all the babies and cull all the deformed babies. So then in the next culls the breeder will cull for body shape, pattern, quality etc. And cull has a few different outcomes. When you cull for deformities it means all the deformed koi are put to death. Then in the other culls some may die because they aren't sellable, some may be sent out to be sold immediately and then some will be kept to grow more.
Hobbyist's also use use the term culling to refer to when they sell/give away some of their personal koi to make room for new ones or to simply decrease the fish load in their pond.
