Carp is one of the largest food fish worldwide, but not so much here in the USA. Handled properly it is good, but most folks don't know how to do it right. If you want to know how it is properly done there are 3 good sources, listed in no particular order.

#1 Make good friends with an Eastern European immigrant family and they will show you their way.

#2 Make good friends with an Asian immigrant family and they will show you their way.

#3 Make good friends with a Black family (preferably from the country) and they can show you their way.

Where I live #3 is the best (and tastiest) choice

You can smother a piece of rope in the right gravy and it'll taste pretty good. Only way I ever ate any carp that tasted decent was grass carp "smothered" fixed by one of my black friend's mom.

I 'spose if you put enough of that hot sauce with the rooster and the squiggly writing on it, carp steamed with ginger isn;t so bad that way either.

Even koi can end up as table fare. I've sold many a aka muji fingerlings to the eel farm so they can raise them up and sell them to grocery stores. No I do not feel guilty. I got a good price for them.

For me I've found this......I have only acquired koi over the years from sources I trust absolutely and implicitly. Sometimes I've paid dearly in dollars, but never have I had a situation where I feared KHV.

My customers that follow a similar rigid regime of koi acquasition have never had a problem with it either.

Lol. I didn't mean to hijack the thread into a carp cook-off. It's making me sick. I keep imagining koi on my plate.

I just brought it up because here in NY, I guess like most of the US, carp isn't a sought after fish... THANK GOODNESS! Lol.

Actually Seanski, if you study the history of "Nishikigoi" just a wee bit you'll learn that it was poor peasant farmers in a remote region of Japan (Yamakoshi) that first developed Nishikigoi from their common "food carp" raised in rice field ponds.
A poor mans meal became art because of simple sharecropper peasants curiosity.

Yup! I was aware of the history. I was just unsure if it was still food fish... and I had a feeling carp still was. I'd rather not think about it being eaten, though. Haha.

Speaking of eating carp and KHV being rampant, how does it affect people?

I'm from NY...read the ingredients on manechewitz gefilte fish in any supermarket.....CARP!!! I'll stick with lox and whitefish though

How can we make KHV more transparent without fear of retaliation from other hobbyist and dealers?
I would:
- trust my dealer friends.
- add koi this year.
- quarantine
- test
- Call a spade a spade...ie..I'd have to be convinced NOT to say that I
had KHV, and where it came from (prob very difficult to convince me
not to talk) if I could prove where it came from, ie, proper tests,
incoming koi just from one source and properly quarantined
seperately, etc.
-deal with the "fall out" from telling the truth

LOX! Do you have ANY idea how hard it is to get good lox in Oklahoma??? It is one of the very few things I miss about living in California. Kaplans Deli, Lox, Scrambled Eggs, & Onions for lunch...
